I did indeed keep all the old panels, wall and roof. I think I have found a local supplier for the 3mm ply, the hardboard/wallboard for the roof was originally textured as I discovered when removing the wood over the joints so getting a match may be difficult as is trying to find the birds eye maple formica and lino flooring!

All good fun though!

Oh wow, I have fond memories of getting stuck into our project but I must confess getting a little shiver down my spine looking at your bare walls. You should be able to get your Maple veneer from this firm http://www.woodlamuk.com/natural-veneers-range.php
You will need to source a supply of stainless screws as well, I think I got mine from Screwfix. the paint we used was Coach paint applied with a roller, it went on beautifully and gave a nice glossy finish that made cleaning down a doddle.
One major difference in your approach and mine was that we did not totally gut the van but did the internal work in three sections, starting at the front and working back. It didnt seem so overwhelming that way.
