2 Questions:
1) What size Sump Plug / Washer I can buy for my 1962 1500 Ford Consul Classic - I haven't removed the old one yet - I want to drain, flush and refil - I have seen new ones listed on Small Ford Parts - quoted as Ford Anglia - but they couldn't guarantee the fitment for my Classic.
2) What Grade SAE oil should I use for the Old Girl??

I would hazard a guess that a Mk1 Cortina washer would fit, and I would also guess 20/50 for the oil. Your handbook should tell you about the specific oil grade required.
