I tend to shy away from this type of program and I hadn't seen it before but I was very pleasantly surprised by the restoration work retaining the patina of age.

Hi
Their general approach is to preserve patina. Though it may depend on proposed use after restoration.
The synopsis gives details of what each programme features, so you can have an idea whether it "floats your boat".
There are currently all but episode 1 of this 4th series available and episode 2 with a clockwork toy car (Jaguar XK) in it expires tomorrow.
