It seems a shame that this great little Minor hasn't been used since restoration, the one I had drove very well for its age.

This comment actually requires a tongue in cheek smiley.

Wouldn't the slip stream grab hold of that opening roof when travelling at speed?

Probably not.
The maximum marking on the 'strip' speedometer (see other thread) is only 80mph. Very Happy
